PREPARATION
- 1. Marinate meat with pounded ingredients for 15 minutes
- 2. Heat oil in pan, add in cinnamon, cloves, fennel seeds, star anise, sliced shallots, onions and curry leaves, then fry till they turned lightly brown in colour and when they smell fragrant
- 3. Add in marinated meat, potatoes and curry paste, then stir-fry briefly
- 4. Add 2 cups (500ml) of water and salt to taste
- 5. Stir well, cover and simmer till meat is tender (approx 35 to 45 minutes)
- 6. Add in coconut milk and tomatoes, 10 minutes before removing from heat
- 7. Remove from heat and serve hot
- Serves 4 to 6 pax
