- 1. Heat oil in pan and add in fenugreek, green chilli, shallots and curry leaves, then stir till fragrant
- 2. Add in curry mixture, tamarind juice, pounded onions and stir-fry briefly
- 3. Add 2 cups (500ml) of water and salt to taste, then stir well
- 4. Add in brinjal, tomatoes and ladyfingers, coconut milk and fish fillet
- 5. Then, cook for another 10 minutes
