PREPARATION
- 1. Marinate chicken with pounded ingredients for 15 minutes
- 2. Heat oil in pan, then add in cinnamon, cloves, fennel seeds, star anise, sliced shallots, onions and curry leaves, and fry till they turn lightly brown and when they smell fragrant
- 3. Add in marinated chicken, potatoes, curry paste and stir-fry briefly
- 4. Add 2 cups (500ml) of water and salt to taste
- 5. Stir well, cover and simmer for about 25 to 30 minutes
- 6. Add in coconut milk and tomatoes, 10 minutes before removing from heat
- 7. Remove from heat when chicken is tender and serve hot. Serves 4 to 6 pax
