Our Har Cheong Gai differs from most that you've ate. While others marinade their Har Cheong Gai after separating the mid joint & drumlet in order for convenient storage, we marinade ours fully, both mid joint & drumlet intact - resulting in all the rich-umami flavour from the shrimp paste being intensely infused into the meat.
