Purple Sweet Potato Onde-Onde Energy Balls

Ingredients

150g Glutinous rice flour
200g Purple sweet potato, steamed and smashed.
90g water

Coconut palm sugar mix:
Coconut palm sugar + Ground almond nuts for filling (2:1 ratio for ground almonds to palm sugar)

For coating:
Coconut flakes*

Method
  1. Knead the glutinous rice flour, purple sweet potato and a bit of water until the mixture can be rolled into a ball like a play dough.
  2. Pinch a small quantity of the dough and roll it into a ball. Press your finger into the ball to make a hollow and fill it up with coconut palm sugar mixture and roll the tiny dough back into a ball. Continue with the remaining dough.
  3. Cook the rice balls in the boiling water. Once the balls float onto the surface, remove them and coat with coconut flakes.
