- Cooking suggestion:
- • Herb Crumbed Roast Tomatoes (Serves 6):
- 1. Cut 6 ripe tomatoes in half, drizzle with oil and roast in a 200°C oven for 20 minutes
- 2. Mix breadcrumbs with herbs (fresh herbs: parsley, thyme, basil, oregano), grated Perfect Italiano Mozzarella, black pitted olives and some extra olive oil
- 3. Topped the tomatoes with the breadcrumb mixture and roughly 6 slices of chopped Prosciutto
- 4. Bake for 15 minutes until golden

- Use up bread that's about to stale to make breadcrumbs and freeze them until required
